Increasing Food Literacy for Students

This project aims to create a variety of accessible and engaging resources for use by students to make the basics of creating meals within budget and time restraints easy and fun.

Introduction:

Living Well within Campus Recreation has a robust Nutrition Consultation program wherein students studying clinical nutrition are mentored and supervised to provide nutrition counseling to their peers. Through the years, we’ve learned that many students do not have cooking skills that make it easy and enjoyable for them to create food for themselves, nor do they have a lot of money to spend on ordering food in. As a result, we aim to develop an easy to use and engaging set of resources to empower students to purchase and prepare delicious food while simultaneously reducing food insecurity by making the most of their food dollars. Skill building for this basic act of self-care sets up a lifetime of enjoyment of food and cooking.

Outcomes: 

Our project looks forward to contributing to a thriving culture of cooking at home amongst students at UC Davis by offering a community around doing so in the Living Well Office, as part of the Nutrition Consultation program. We envision students helping students and learning from each other.


Opportunities for Involvement: 

Any students with skills and/or passion in the area of purchasing and creating tasty meals, or ideas for the creating effective resources, are encouraged to reach out to the Student Assistants working on the project. They may do so by emailing lwadams@ucdavis.edu.


Recent Milestones:

The project team is currently convening to put together and finalize an outline of tools needed to realize our goals. Student Assistant Applications are being reviewed for a full throttle start on development in Fall 2023!
